Il tartufo - Pisa in Toscana
I tartufi non sono distribuiti in modo omogeneo ma si trovano in determinati punti all'interno del proprio terreno ("areale"). Difficile è stabilire dove nascono e perché si trovino in certe zone e non in altre. Esistono varie classificazioni, ma quella classica distingue tra tartufo bianco e tartufo nero. A differenza del tartufo nero che si adatta ai terreni argillosi, quello bianco cresce nella vegetazione umida, a una certa distanza da alberi come pioppi, tigli, querce e salici, in terreni calcarei, poveri di sostanze organiche (caratteristica dei terreni toscani).
La sua diffusione è condizionata anche da altri fattori, come il livello di inquinamento, l'uso di antiparassitari, la presenza di animali come il cinghiale, infine il clima che deve essere caratterizzato da due periodi di piogge abbondanti (aprile-maggio e ottobre-novembre), intervallati da una estate secca. Quanto più l'estate è secca, tanto migliore sarà la raccolta del tartufo.
