Truffle - Pisa in Tuscany
Truffles are not evenly distributed but are found at specific spots within truffle areas. It is difficult to determine where they form and why they are found in certain places and not in others. There are various classifications, but the classic distinction is between white and black truffle.
Unlike the black truffle, which is well adapted to clay soils, the white truffle grows in wet vegetation at a distance from trees such as poplars, limes, oaks and willows, in calcareous soils poor in organic substances (a characteristic of Tuscan terrains). Factors that influence the presence of truffles include pollution levels, the use of pesticides, the presence of animals such as the wild boar, and the climate, which must be characterized by copious rains during the spring and the autumn (April to May and October to November) and a dry summer. The drier the summer, the better the truffle yield.
